- 3 large overripe bananas
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 8 oz cream cheese
- 1/4 cup unsalted butter
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch pan. Mash the bananas and set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- In a separate bowl, whisk together flour, baking soda, and salt. Add dry ingredients alternately with buttermilk, beginning and ending with flour.
- Fold in mashed bananas until fully incorporated. Pour batter into prepared pan and smooth the top.
- Bake for 30–35 minutes or until a toothpick inserted comes out clean. Let the cake cool completely.
- For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, then beat in vanilla until fluffy.
- Spread frosting evenly over cooled cake, slice, and serve.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- This cake can also be frozen for up to 2 months. Thaw in the refrigerator before serving.
