Description

This delicious banana cake is moist and topped with a creamy frosting, making it perfect for any occasion.


Ingredients

  • 3 large overripe bananas
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 8 oz cream cheese
  • 1/4 cup unsalted butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch pan. Mash the bananas and set aside.
  2. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Add dry ingredients alternately with buttermilk, beginning and ending with flour.
  4. Fold in mashed bananas until fully incorporated. Pour batter into prepared pan and smooth the top.
  5. Bake for 30–35 minutes or until a toothpick inserted comes out clean. Let the cake cool completely.
  6. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, then beat in vanilla until fluffy.
  7. Spread frosting evenly over cooled cake, slice, and serve.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • This cake can also be frozen for up to 2 months. Thaw in the refrigerator before serving.
