- 2 cups diced cooked chicken
- 10 ounces cream of chicken soup
- 6 ounces egg noodles, cooked and drained
- 1 cup frozen mixed vegetables
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 16 Ritz crackers, crushed
- 2 tablespoons butter, melted
Instructions
- Preheat the oven to 350°F. Spray an 8×8-inch or 2-quart baking dish with cooking spray and set aside.
- In a large bowl, stir together 2 cups diced cooked chicken, 10 ounce can cream of chicken soup, 6 ounces egg noodles, cooked and drained, 1 cup frozen mixed vegetables, 1 cup shredded cheddar cheese, 1/2 cup sour cream, 1/2 cup milk, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/4 teaspoon black pepper until combined well.
- Add the mixture to the prepared baking dish.
- In a small bowl, stir together 16 Ritz crackers, crushed and 2 tablespoons butter, melted. Add the mixture to the top of the casserole.
- Bake, uncovered, for 30-35 minutes until lightly browned on top and bubbly along the edges. Serve immediately.
Notes
- This casserole can be prepared ahead of time and baked just before serving.
- For added flavor, consider mixing in some herbs or spices to the chicken mixture.
