Instructions
- In a large mixing bowl, beat the unsalted butter, brown sugar, and granulated sugar together until light and fluffy.
- Add the egg and vanilla extract. Mix until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually mix the dry ingredients into the butter mixture until combined.
- Fold in the toffee bits, distributing evenly.
- Scoop dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake at 350°F (175°C) for 9 to 11 minutes, until edges are golden.
- Let cookies cool completely on a wire rack.
- Melt the semi-sweet chocolate and dip each cooled cookie halfway.
- Place dipped cookies on parchment until the chocolate sets.
