Description
A deliciously creamy churro cheesecake, topped with a crunchy cinnamon-sugar crust.
Ingredients
Scale
- 16 ounces cream cheese, softened
- 1 cup sugar, divided
- 2 cans refrigerated crescent roll dough
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, melted
- 2 tablespoons ground cinnamon
Instructions
- Preheat your oven: Set your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easier cleanup.
- Make the cinnamon-sugar mix: In a small bowl, mix together 1/2 cup of sugar and 2 tablespoons of cinnamon. This blend is what gives the churro cheesecake its signature flavor and toasty finish.
- Press the bottom dough layer: Unroll one can of crescent roll dough and press it evenly into the bottom of your prepared dish. Pinch any seams together to form a seamless layer.
- Prepare the creamy cheesecake filling: In a medium mixing bowl, blend the softened cream cheese, the remaining 1/2 cup sugar, and the vanilla extract until smooth and creamy. This should take about 2–3 minutes using a hand mixer.
- Spread the filling: Pour the cream cheese mixture over the bottom dough layer and spread it evenly with a spatula.
- Add the top dough layer: Unroll the second can of crescent dough and carefully lay it over the cheesecake filling. Try to align it as closely as possible to cover the surface.
- Pour melted butter and cinnamon sugar: Drizzle the melted butter over the top layer, making sure it coats the dough evenly. Then sprinkle the cinnamon-sugar mixture generously over the top. This forms that crunchy churro-style crust as it bakes.
- Bake until golden and bubbly: Place the dish in the oven and bake for 30–35 minutes, or until the top is golden brown and the center is set.
- Cool, chill, then slice: Let the churro cheesecake cool to room temperature, then refrigerate for at least 1 hour before slicing. This step helps the layers set beautifully.
Notes
- For best results, ensure the cream cheese is fully softened before mixing.
- Serve chilled for optimal flavor and texture.
