Instructions

  1. Preheat your oven: Set your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easier cleanup.
  2. Make the cinnamon-sugar mix: In a small bowl, mix together 1/2 cup of sugar and 2 tablespoons of cinnamon. This blend is what gives the churro cheesecake its signature flavor and toasty finish.
  3. Press the bottom dough layer: Unroll one can of crescent roll dough and press it evenly into the bottom of your prepared dish. Pinch any seams together to form a seamless layer.
  4. Prepare the creamy cheesecake filling: In a medium mixing bowl, blend the softened cream cheese, the remaining 1/2 cup sugar, and the vanilla extract until smooth and creamy. This should take about 2–3 minutes using a hand mixer.
  5. Spread the filling: Pour the cream cheese mixture over the bottom dough layer and spread it evenly with a spatula.
  6. Add the top dough layer: Unroll the second can of crescent dough and carefully lay it over the cheesecake filling. Try to align it as closely as possible to cover the surface.
  7. Pour melted butter and cinnamon sugar: Drizzle the melted butter over the top layer, making sure it coats the dough evenly. Then sprinkle the cinnamon-sugar mixture generously over the top. This forms that crunchy churro-style crust as it bakes.
  8. Bake until golden and bubbly: Place the dish in the oven and bake for 30–35 minutes, or until the top is golden brown and the center is set.
  9. Cool, chill, then slice: Let the churro cheesecake cool to room temperature, then refrigerate for at least 1 hour before slicing. This step helps the layers set beautifully.
