This creamy mushroom soup is loaded with fresh cremini mushrooms and flavored with thyme, perfect for a cozy night in.


Ingredients

  • 1 lb fresh cremini mushrooms, sliced
  • 2 tbsp unsalted butter
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat. Sauté onions until translucent (about 5 minutes).
  2. Add minced garlic and sliced mushrooms; cook until mushrooms soften (approximately 8 minutes).
  3. Pour in vegetable broth and bring to a simmer for 10 minutes.
  4. Stir in heavy cream, thyme, salt, and pepper; cook for another 5 minutes without boiling.
  5. Blend until smooth using an immersion blender or counter blender (reserve some mushroom pieces for texture if desired).
  6. Serve hot, garnished with fresh thyme or croutons.
