- 1 lb fresh cremini mushrooms, sliced
- 2 tbsp unsalted butter
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 cup heavy cream
- 2 tsp fresh thyme (or 1 tsp dried thyme)
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat. Sauté onions until translucent (about 5 minutes).
- Add minced garlic and sliced mushrooms; cook until mushrooms soften (approximately 8 minutes).
- Pour in vegetable broth and bring to a simmer for 10 minutes.
- Stir in heavy cream, thyme, salt, and pepper; cook for another 5 minutes without boiling.
- Blend until smooth using an immersion blender or counter blender (reserve some mushroom pieces for texture if desired).
- Serve hot, garnished with fresh thyme or croutons.
