  • 2 tablespoons gochujang (Korean red pepper paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey (or maple syrup)
  • ½ cup heavy cream
  • ¼ cup pasta water (reserved)
  • Salt and black pepper, to taste
  • 1 scallion, sliced (for garnish)
  • Sesame seeds (optional garnish)
  • Grated Parmesan (optional)

Instructions

  1. Boil the Pasta: Start by cooking your pasta in a large pot of salted water according to package directions. While the pasta cooks, reserve about ¼ cup of pasta water and then drain the rest.
  2. Sauté Aromatics: In a large skillet over medium heat, add the neutral oil. Once hot, sauté the garlic and shallots until fragrant and translucent—about 2-3 minutes. This is where the flavor base begins, and you’ll already start smelling the goodness.
  3. Add Gochujang and Seasonings: Stir in the gochujang, soy sauce, and honey. Cook for 1-2 minutes until the paste is softened and the sauce becomes slightly caramelized. This step unlocks the deep, fermented heat of gochujang and gives the dish its signature flavor.
  4. Pour in Cream: Reduce heat to low and stir in the heavy cream. Let it simmer gently, blending into a velvety, orange-red sauce. If it’s too thick, add a splash of the reserved pasta water to loosen it up.
  5. Combine Pasta and Sauce: Add the cooked pasta directly into the skillet and toss to coat evenly. Let it cook for another minute so the noodles absorb the sauce. Adjust seasoning with salt and black pepper to taste.
  6. Plate and Garnish: Serve hot, garnished with chopped scallions, sesame seeds, or a touch of grated Parmesan if desired.

  • The sweetness of the honey can be adjusted according to personal preference.
