Description

This creamy garlic chicken is perfect for a slow cooker meal, with tender chicken breasts simmered in a rich sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 Tablespoons olive oil
  • 2 Tablespoons butter
  • 1 1/2 cups chicken broth
  • 3 Tablespoons cornstarch
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon paprika
  • 1/3 cup chopped sun-dried tomatoes, drained
  • 1/2 cup freshly grated parmesan cheese
  • 68 fresh basil leaves, chopped

Instructions

  1. In a small bowl, mix together: 1/2 teaspoon salt, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/4 teaspoon black pepper. Season chicken breasts on both sides with the seasoning mix.
  2. Heat a large skillet over medium-high heat. Add olive oil and butter (allow the butter to melt).
  3. Sear the chicken breasts on both sides until golden brown, take the pan off the heat, and set aside. Note: You are not cooking the chicken all the way, just browning it.
  4. Whisk together the chicken broth and cornstarch in a bowl until there are no lumps.
  5. Add the chicken broth mixture to the bottom of a 6-quart slow cooker.
  6. Whisk in the heavy cream, minced garlic, Italian seasoning, salt, black pepper, red pepper flakes, and paprika.
  7. Place the seared chicken in the slow cooker and pour the remaining olive oil and butter from the pan on top.
  8. Top each piece of chicken with sun-dried tomatoes. Cook on low for 6-8 hours.
  9. After cooking, take the chicken out and whisk in parmesan cheese. Return chicken to the slow cooker and add basil before serving.

Notes

  • For a creamier sauce, you may want to exclude the heavy cream to avoid lumps or curdling.
  • Do not lift the lid while cooking to ensure tender meat.
