- 5 pounds Yukon Gold potatoes
- 1 cup chicken broth
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 tablespoons unsalted butter
- 4 ounces cream cheese
- 1/2 cup sour cream
- Optional: fresh chopped chives
Instructions
- Peel and cube the Yukon Gold potatoes. Place them in a 6-quart crockpot with chicken broth, garlic, salt, and pepper.
- Cover and cook on High for 3 to 4 hours or Low for 6 to 7 hours until fork tender.
- Add butter, cream cheese, and sour cream directly into the crockpot.
- Mash everything together until creamy and smooth using a potato masher or hand mixer.
- Taste and adjust salt and pepper if needed. Add milk or broth to thin if desired.
- Serve warm, topped with extra butter and chopped chives if using.
