Ingredients

  • 1 ½ cups granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter (room temperature)
  • 4 large eggs
  • 2 tsp pure vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries (sliced)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, sift together flour, baking powder, and salt.
  3. In another bowl, cream room temperature butter and sugar until light and fluffy (about 4-5 minutes).
  4. Beat in eggs one at a time, followed by the vanilla extract.
  5. Gradually add dry ingredients to the wet mixture, alternating with milk or cream until just combined.
  6. Divide batter into prepared pans and bake for 25-30 minutes until golden brown; a toothpick should come out clean.
  7. While cakes cool, whip heavy cream until stiff peaks form; gradually add powdered sugar for sweetness.
  8. Once cakes are completely cool, layer them with whipped cream and sliced strawberries. Frost the top and sides with more whipped cream.
