Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a bowl, whisk together flour, baking powder, salt, and poppy seeds.
- In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in lemon zest, lemon juice, and vanilla extract.
- Gradually fold in dry ingredients until just combined; do not overmix.
- Pour batter into the prepared pan and smooth the top. Bake for 25-30 minutes or until golden brown and a toothpick inserted comes out clean.
- Let cool for 10 minutes before transferring to a wire rack.
