- 1 medium green cabbage, chopped
- 1 lb ground beef or lamb
- 1 large yellow onion, diced
- 3 tbsp tomato paste
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 tsp paprika
- 1 tsp black pepper
- 1 tsp salt (adjust to taste)
- 2 tbsp extra virgin olive oil
- 4 cups vegetable broth or water
Instructions
- Prepare all ingredients by chopping the cabbage and dicing the onions and garlic.
- In a large pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant.
- Add the ground meat to the pot; cook until browned while breaking it apart with a wooden spoon.
- Stir in the tomato paste until well combined with the meat mixture.
- Fold in the chopped cabbage and canned tomatoes, allowing them to mix into the stew.
- Pour vegetable broth over the mixture and bring to a boil. Reduce heat to low and adjust flavors as needed before serving.
Notes
- This stew can be served with crusty bread for dipping.
