Description
A delicious one-pan meal featuring chicken breasts, orzo pasta, and fresh basil.

- 4 boneless skinless chicken breasts
- 1 cup orzo pasta
- 1 can (14 oz) diced tomatoes
- 1 cup fresh basil leaves
- 3 garlic cloves, minced
- 1 cup shredded mozzarella cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 2 cups chicken broth or water
Instructions
- Preheat oven to 400°F (200°C). Lightly coat a large oven-safe skillet with nonstick cooking spray.
- Season chicken breasts with salt and pepper and brown them over medium heat for about 5 minutes on each side until golden.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Stir in diced tomatoes and orzo, then add broth or water until the pasta is covered by about an inch.
- Bring to a simmer, cover with a lid or foil, and bake for 20 minutes.
- Remove from oven, sprinkle mozzarella on top, and bake uncovered for another 5-10 minutes until bubbly and golden.
- Garnish with fresh basil before serving.
