Description

A delicious one-pan meal featuring chicken breasts, orzo pasta, and fresh basil.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup orzo pasta
  • 1 can (14 oz) diced tomatoes
  • 1 cup fresh basil leaves
  • 3 garlic cloves, minced
  • 1 cup shredded mozzarella cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 cups chicken broth or water

Instructions

  1. Preheat oven to 400°F (200°C). Lightly coat a large oven-safe skillet with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper and brown them over medium heat for about 5 minutes on each side until golden.
  3. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Stir in diced tomatoes and orzo, then add broth or water until the pasta is covered by about an inch.
  5. Bring to a simmer, cover with a lid or foil, and bake for 20 minutes.
  6. Remove from oven, sprinkle mozzarella on top, and bake uncovered for another 5-10 minutes until bubbly and golden.
  7. Garnish with fresh basil before serving.
