Description

This Garlic Butter Chicken and Vegetables recipe is a simple, flavorful dish perfect for a weeknight dinner.

Ingredients

Scale
  • 1 ½ pounds boneless, skinless chicken breasts, cut into large cubes
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 cup baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • Optional: chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a large sheet pan or line it with parchment paper for easy cleanup.
  2. In a large bowl, toss the chicken cubes with half of the melted butter, minced garlic, Italian seasoning, paprika, salt, and pepper. Set aside to marinate briefly while you prep the veggies.
  3. In another bowl, combine baby carrots, broccoli florets, and halved baby potatoes. Drizzle with olive oil and season with a pinch of salt and pepper. Toss to coat evenly.
  4. Spread the seasoned vegetables out on the sheet pan. Nestle the marinated chicken pieces between the veggies, making sure everything is in a single layer for even cooking.
  5. Pour the remaining garlic butter mixture over the entire pan, ensuring every bite gets a touch of that golden, savory richness.
  6. Place the sheet pan in the oven and roast for 25–30 minutes, or until the chicken is cooked through (internal temp of 165°F) and the vegetables are tender with crisped edges. If you want extra browning, broil for an additional 2–3 minutes at the end.
  7. Sprinkle chopped parsley over the top before serving, if desired. Serve hot, straight from the pan, with a side of warm bread or rice if you like.
